Chicken, Corn and Avocado No Cook Supper

You’ve probably seen this dish around the internet for 2 or 3 years and it's the perfect no cook summer dish using rotisserie chicken, avocado and corn on the cob. It’s generally made with a dressing of olive oil, lemon juice and spices but using Rozie’s Mild RelSa in place of the dressing brings extra flavor with more veggies. Rozie’s RelSa is versatile in many cooking and cold preps.


Rotisserie chicken, bone and skin removed, pulled or cubed

4 ears corn, cooked and removed from cob

½ cup Rozie’s Mild RelSa

2 cups cherry or grape tomatoes, halved

½ bunch cilantro, leaves only

2 avocados, pitted and cubed

1 lime, juiced

In a large bowl combine chicken, corn, RelSa. Fold in cherry tomatoes and cilantro.

Combine avocado and lime juice in a small bowl, add to the rest and gently fold in.

If making this dish a day ahead wait to add the avocado before serving. The lime juice will decrease the avocado browning but it’s not perfect so if you can wait, do so.
