Grilled Cuban ala Rozie

After making so many Grilled Cuban Sandwiches in September and October I didn't see myself making another one so soon. Once I mixed Rozie's Hot RelSa with Koop's yellow mustard I knew I had to make another, uhh kind of wish I would have done this at the World Food Championships in Dallas, October - hindsight
This Cuban is made with Bolillo Rolls, slather some Koops and Hot Relsa (50/50 mix), thin ham slices, roast pork, Swiss cheese, sweet pickles (works well with the mustard/RelSa mix instead of dill) then more mustard/RelSa mix on the upper half of the roll.
Seal the roll and brush melted butter on the top.
When I cook these I have 2 Lodge cast iron griddles available (preheated for about 25 minutes in the oven at 400) I place the sandwich on the lower grill and top with the other grill - I use the smooth sides for cleaning convenience. Place in the oven for 5 minutes, take it out, slice it - just that simple.
