Hot Beer Cheese Dip

Since we're first cousins to Cheese Heads here in Michigan's Upper Peninsula I thought maybe a beer cheese dip would be a great addition to our Game Day Snacks.


2 tablespoons unsalted butter 3 tablespoons all purpose flour 1 cup whole milk 2/3 cup lager beer (I used Corona) 2 teaspoons Worcestershire sauce 1 teaspoon Dijon mustard 1 teaspoon garlic powder ¼ teaspoon smoked paprika ½ teaspoon salt 8 ounces cheddar, shredded to yield 3 cups 1/3 cup Rozie’s Hot RelSa

In a medium saucepan over medium heat, melt butter. Sprinkle the flour over melted butter and whisk until a thick paste forms. In a slow, steady stream, whisk in the milk. Continue whisking until it slightly thickens. Add the remaining ingredients one at a time, whisking with each addition. Remove from heat, add 1/3 cup Rozie’s Hot RelSa and stir. Serve immediately.

The pretzel rolls shown in the photo are purchased, however, don't be intimidated by baking them, they're fairly easy and much better fresh.
