Beer Cheese Dip
Since Yoopers are second cousins to Cheeseheads, I decided a beer cheese dip would be a great addition to our Game Day Snacks.
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup whole milk
2/3 cup lager, room temperature
2 teaspoons Worcestershiresauce
1 teaspoon Dijon mustard
1 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/2 teaspoon salt
8 ounces cheddar, shredded to yield 3 cups
1/3 cup Rozie's Hot RelSa
In a medium saucepan over medium-high heat, melt butter.
Sprinkle the flour over melted butter and whisk until a thick paste forms.
In a slow, steady stream, whisk in the milk. Continue whisking until it slightly thickens.
Add the remaining ingredients one at a time, stirring with each addition.
Remove from heat and place in a crockpot on low to keep warm.
