This Crustless Quiche recipe is a healthier and easier version of classic quiche.
1 teaspoon baking powder
½ cup all-purpose flour
½ teaspoon salt
1 ½ cups cottage cheese – 4% fat
4 tablespoons Rozie’s Medium RelSa
3 cups grated cheddar
Preheat oven to 350 degrees. Prepare deep dish pie plate or casserole dish with cooking spray.
In a large bowl beat 8 eggs for 4 minutes.
In a small bowl combine flour, baking powder and salt.
To the eggs add the flour mixture and combine with hand mixer.
Add cottage cheese and Rozie's Medium RelSa, combine with hand mixer.
Fold in the grate cheddar.
Pour mixture into greased deep dish pie plate and bake at 350 for 40 minutes.
Optional: Last minute or two of cooking may add some shredded cheddar on top.
